Made by Carr Valley Cheese in La Valle, Wisconsin, 4th generation owner and Master cheesemaker Sid Cook cold smokes his Swiss over apple wood. This European-style cheese is a combination of time-honored craftsmanship and Wisconsin's strong dairy heritage. Enjoy on a cheeseboard with crackers, grapes, pears and prosciutto; melt on sandwiches or burgers. Taste: Mild, sweet, buttery, nutty, grassy and smokey. Pairings: Pinot Noir, Chardonnay, Sauvignon Blanc, Syrah; Pale ales, Lagers, Weiss beers. Made with pasteurized cow's milk and microbial rennet.
