Introduced into the United States in early 2022, this Gold Winner at the 2022 World Cheese Awards is made by cheesemaker Carmela in Galicia, Spain. An Alpine cheese, it’s name refers to a location found along the Camino de Santiago pilgrimage that runs from Spain to France. Crumble on a cheese board: crusty bread, cherry
jam or grapes, mixed nuts and salami.
Taste: Smooth, with tropical and caramel notes and a nutty finish.
Pairings: Chardonnay, Sauvignon Blanc, Pinot Noir, Merlot, Sangiovese, Syrah; Wheat or Belgian beers.
Made with pasteurized cow's milk and traditional rennet.
