Made at their creamery in Buena Vista, Colorado by Buck & Bloom Cheese Co, a team of cheesemakers took over Jumping Good Goats facility in 2025. They are continuing the tradition of artisanal cheeses made in the Rocky Mountains starting with Highland, an alpine-style cheese made with milk sourced from Colorado Cow. Enjoy on a cheeseboard with a crusty bread, bresaola or prosciutto or pâté, cornichons, pickled veg, onion jam, mustard or honey, fresh or dried fruit and nuts; melt into gratins or sandwiches. Taste: Smooth, nutty, buttery, and a bit savory with toasted notes. Pairings: Riesling, Grüner Veltliner, Pinot Noir, Chardonnay, Beaujolais; Belgian-style ales, brown ales, amber ales, bocks, stouts; port, and whiskey. Made with pasteurized cow's milk and traditional rennet.
