Fiore Sardo, the flower of Sardenia, is the oldest cheese made on this beautiful, ancient island off the coast of Italy. While in their molds, this sheep cheese is dipped in hot water, unmolded, placed in a brine and then later smoked. Enjoy as a table cheese; grate over vegetables, pasta or casseroles. Taste: Sweet and rich with notes of nuts, burned caramel, smoke and salt. Pairings: Crisp whites or fruit-forward reds. Made with pasteurized sheep's milk and traditional rennet.
