Grazing in an area famous for its wines, the hardy Lacaune sheep forage alongside their shepherds. They produce a rich milk ideal for making cheeses like this round which has been coated with honey and oregano--infusing the flavors from the outside in. Enjoy on a cheese board with Jamón Serrano ham, membrillo and Valencia almonds. Taste: Rich with sweet herbal notes, a hint of tang and a Manchego-like texture.
