Handmade in Vermont by Maplebrook Farms, Burrata’s outside is fresh mozzarella, but the inside is filled with Stracciatella, a thin layer of fresh cream and little bits of hand pulled curd. Enjoy with fresh tomatoes and basil or prosciutto and figs; scoop out center with crusty bread.
Taste: Fresh milk; creamy.
Pairings: Cabernet/Merlot (Bordeaux), Cabernet Sauvignon, Grenache, Pinot Noir, Roija, Tempranillo.
Made with pasteurized cow's milk and vegetarian rennet.
