This 2012 World Cheese Award Winner has been made by the Leonardi family in Piedmont, Italy since 1935 when it was delivered, by horse-drawn carriage, to a lake-front hotel frequented by nobles, princes and queens, who appreciated the “soft cheese” with a slightly spicy taste. Try it as an appetizer, a dessert with fruit, or crumbled on a salad.
Taste: Creamy, moist and buttery.
Pairings: Sangiovese, Sauternes, Muscat, Port, Gruner Veltliner, Sherry.
Made with pasteurized cow's milk and traditional rennet.
