Dick Willems, native of Holland, makes his artisan cheese from grass-fed cows in Cork. The Willems belong to the very first generation of Irish farmhouse cheesemakers, whose cheesemaking began as a vision of agricultural self-sufficiency. On a cheese tray; sandwich; with fruit; grate on potatoes or pasta. Taste: Similar to a Dutch Gouda. Pairings: Sparkling wines and ciders, non-oaky Chardonnay; Pale Ales, Stouts. Made with pasteurized cow's milk and traditional rennet.
