Named after the city of Brugge, Comtesse—also called The Grand Dame by its makers—is made by Milcobel, a large, notable dairy cooperative in Kallo, Belgium. Made from 100% ‘meadow milk’, their cooperative is a sustainable entrepreneurship with a heart for people, animals and the planet. Enjoy on a cheese board with crackers, apples, pears or figs, fruit chutneys and nuts; use in a cheese sauce, shaved on salads or in sandwiches.
