Artisanal and hand-made, this wine-bathed, or drunken, cheese is made in an area rich in history and heritage, the Iberian Peninsula. Much respected cheesemakers from Central Spain collect and use milk from goats adapted to browsing the scrubby hillsides of the Mediterranean for grasses and herbs. Enjoy paired with hearty breads, fruit, salads, olives, prosciutto salami, and Spanish chorizo.
Taste: Creamy, mildly goaty, with a subtle fruity flavor and wine aroma.
Pairings: White wine; wheat beer.
Made with pasteurized goat's milk and traditional rennet.
