Said to have been hidden from the tax collector in wine vats, Ubriaco, meaning drunk, is made in the Veneto region of Italy. Bathed in Prosecco wine and wine must, this cheese is made by cheesemaker Sergio Moro (who also created Sottocenere), was granted the privilege of using the DOP name ‘Prosecco’ with his cheese.
