São Miguel is the biggest of the far flung, volcanic Portuguese islands and 95 % of it is reserved for natural habitat. With very mild winters and warm summers, cows are able to graze year round and so this “Green Island” cheese is made in the traditional, farmhouse way year round. Enjoy as a snack, in salads, pasta, au gratin; melts easily.
Taste: Hard, slightly piquant and salty.
Pairings: Chardonnay or sparkling wine.
Made with raw cow's milk and traditional rennet.
