Made in the Aveyron region of South France—a largely rural area where you can find a national park, castle, medieval ruin, monasteries, and inhabitants that are excellent craftsmen like cheesemakers—this newer tomme, since 2017 from Fromagerie Papillon, is made with milk provided by the local shepherds and their Lacaune sheep. Enjoy with all things cherries or in grilled cheese, quiche, soups or gratin.
Taste: Soft, mild, slightly ‘sheepy’ with caramel notes and buttery finish.
Pairings: Pinot Noir
Made with pasteurized sheep's milk and traditional rennet.
