This traditional, artisan cheese is made by Cuquerella family in La Mancha, Spain. Near two natural parks still used by local shepherds, the terrain is rocky, dry and unfriendly to cows but suited to sheep. Committed to sustainability, milk from small farms where sheep graze freely and renewable energy is used whenever possible. Enjoy with fruit, walnuts, honey and Serrano Ham. Taste: Light and flavorful; floral scent and nutty flavor with the aroma and flavor of rosemary. Pairings: Spanish reds like Rioja or Ribera del Duero. Made with pasteurized sheep's milk and traditional rennet.
