Named after the mountain area of Dobbiaco in Italy’s Puster Valley-- considered one of the most popular and beautiful valleys in the Alps--this artisan cheese is made by the Tre Cime Mondolatte Dairy and the cheese is similar in consistency to Fontina. Enjoy with Italian items like rye bread, ‘chutneys’, and fresh pears; grill with polenta and porcini mushrooms. Tasting: Mild, milky and sweet. Pairing: White wines. Made with pasteurized cow's milk and traditional rennet.
