Made in the Basque region of France by Onetik, a medium-size creamery in the small town of Macaye, local herds graze hills full of wildflowers and fresh grass which in turn lends grassy or floral notes to the cheese. Onetik uses milk from a cooperative and supports the preservation of historic pasture-lands by making sure to collect milk from remote areas as well. Cooking: Enjoy on a cheese board with fruit, nuts, crackers and honey; melt into fondues or gratins; add to salads. Taste: Nutty, grassy, and subtly earthy notes; may have hints of caramel. Pairings: Light-bodied red wine, or a high- acidity white wine. Made with pasteurized cow's and goat's milk and traditional rennet.
