Made in France around Périgord, a region of Bordeaux known for its goat cheese, Pico is a little button of a young camembert-style cheese with a thin Geotrichum rind. Eat plain as an appetizer or topped with candied walnuts and honey; also on a cheeseboard.
Taste: Lactic, grassy-sweet & a hint of salt; scant barnyard notes; more complex & pungent as it ages.
Pairings: Light, dry white wines.
