White Stilton, along with Blue Stilton, has PDO status. Only three counties—Derbyshire, Leicestershire and Nottinghamshire—may be called Stilton, and only seven dairies are licensed to make White Stilton (which is the same cheese as Blue Stilton, but without the introduction of the penicillium roqueforti mold). A snacking cheese; great for salads or on a cheeseboard.
Taste: A young, fresh cheese with a mild flavor and crumbly texture.
Pairings: Pinot Grigio or White Bordeaux.
Made with pasteurized cow's milk and vegetarian rennet.
