Part of Deer Creeks ‘Handmade Heritage Collection’, Robin (the WI state bird) is a tribute to Chris Gentine’s grandfather. Chris, cheese grader at The Artisan Cheese Exchange, partnered with cheesemaker Kerry Henning to re-create a bandaged wrapped, waxed Colby (an American original whose ‘standards of identity’ were changed in 1998). Enjoy with crackers, fruit, nuts, summer sausage, sandwiches. Taste: Clean and buttery with nutty notes and slightly salty finish. Pairings: Malbec, Pinot Noir, Cabernet Sauvignon Made with pasteurized cow's milk and microbial rennet.
