This American original, and the first ever Alpine/Cheddar cross, is made using 7 cultures including Cheddar and Gruyere. It is then cave-aged (which creates that "crunch" from crystallized proteins) by Jasper Hill who provides a customized aging environment. Enjoy with apples, pears and fig jam on a cheese board.
