This AOP cheese (which guarantees the highest standards in terms of origin, processes and quality) is made in the Auvergne region of France. A mountain cheese dating back 2000 years, some compare it to a British Farmhouse Cheddar. Enjoy with pickled vegetables, rustic breads, peppery greens and grainy mustards.
Taste: Buttery and nutty with earthy undertones.
Pairings: Beaujolais, Pinot Noir, Merlot, Sauvignon Blanc, Merlot, Gewürztraminer.
Made with pasteurized cow's milk and traditional rennet.
