This pasta filata (or spun paste) cheese is produced with milk from local farms by stretching fresh curds like taffy and then molding the curd. Excellent melting cheese; atop toasted baguette; omelets; grate over finished dishes. Taste: Sharp, tangy, spicy flavor. Pairings: Light red or rose wine; lager beer. Made with pasteurized cow's milk and traditional rennet.
