Named after one of the farmers who supply the milk, Moosbacher is a linen-wrapped Austrian cheese. It is the only cheese in the world using both external and internal ripening processes (thus the holes in the paste AND washed-rind). Grilled cheese sandwiches, gratins, sauces, or snacking.
Taste: Mild and slightly sweet; fruity, nutty and slightly funky.
Pairings: Hearty German beers or a spicy fruited Belgian ale like New Belgium’s Trippel.
Made with pasteurized cow's milk and traditional rennet.
