Made only seasonally when the grass is green, Belford Reserva is a Colorado original cheese made in Durango on The James Ranch, and then finished in their aging cave. Have with sandwiches, soups, sauces or snack; with red grapes, honey or roasted pecans. Taste: Aged Gouda-esque cheese with butterscotch notes. Pairings: Cabernet Sauvignon, Syrah Zinfandel, or Pinot Noir. Made with raw cow's milk and traditional rennet.
