Windsor Red, a cheddar cheese blended with a bit of Port and Brandy, is a product of Long Clawson Dairy. Founded in 1911, twelve Leicestershire farmers formed a co-op to produce cheese in the village of Long Clawson. Striking on a cheese board or in a salad; enjoy with crackers.
Taste: Smooth and mild cheddar; sweet from the port and brandy.
Pairings: Sangiovese, Chianti.
Made with pasteurized cow's milk and microbial rennet.
