Also known as Y-Fenni, Red Dragon (as seen on the flag of Wales) is a Welsh Cheddar made in small batches with locally sourced English and Welsh milk, Welsh brown ale and whole grain mustard seeds. It is finished by being hand dipped in red wax. Serve as a table cheese or melt on toast. Makes a great Welsh Rabbit! Taste: Mild, buttery, spicy, tangy. Pairings: Shiraz, Welsh Brown ale. Made with pasteurized cow's milk and vegetarian rennet.
