Originally created to promote the Toggenburg goat breed, this 2nd version has a flower rind to reflect the alpine pastures where the goats graze. Made by hand in a copper vat at Güntensperger Käse AG by cheesemaker Reto Güntensperger--who grew up in a dairy in the Toggenburg hills, his bed just steps from the cheesemaking room. Committed to sustainable production practices, the family’s dairy specializes in creating traditional Swiss cheeses using milk from local farms. Pretty on a cheese board! Taste: Mildly goaty, creamy and rich; the rind is colorful and edible. Pairings: Riesling, Gewürztraminer, IPA. Made with raw goat's milk and traditional rennet.
