A cheese originating in Puglia, Italy, Stracciatella--meaning "little rags" or "shreds"--is made by fresh torn mozzarella mixed and soaked in rich, fresh cream. The fifth generation of the Liuzzi family in Hamden, CT continue to uphold the traditional recipes from founding brothers Pasquale (Lino) and Nicola Liuzzi. Enjoy on bruschetta, pasta, pizza, salad, or with fresh fruit like peaches, figs, or melons.
Taste: Mild, rich, creamy, milky, and slightly salty.
Pairings: Pinot Grigio, sparkling wines; blonde ales, wheat beers.
