Made by Carr Valley Cheese in Lavalle, Wisconsin, owner Sid Cook, a 4th generation cheesemaker and winner of more than 850 awards, “. . . felt like we were missing the quintessential dessert cheese in our line”. Sid took their cheddar cheese base, combined it with sugar, walnuts, butter, and cocoa and then pressed into a pan. Voilà! A snack with nuts or peanut butter, with aged Balsamic vinegar, baked into brownies, hot chocolate or s’mores, in an ice cream sundae, spread on a croissant with berries. Taste: Rich, savory, sweet and creamy with crunchy walnuts bits. Pairings: Dessert wines: Moscato, Port, Riesling; Coffee . . . In the cup or on the side. Made with pasteurized cow's milk and traditional rennet.
