Artisanal and hand-made, this pimentón-rolled cheese is made in Jumilla, Spain. Grazing in an area famous for its wines, the rugged Murcian goat forages alongside their shepherds over the barren plains of La Mancha and end up producing a milk that is sweeter than other breeds. Blend with cheddar, mayonnaise and spices to create a pimento cheese dip to enjoy with crudites.
Taste: Creamy, bright, and mildly goaty with a sweet, slightly fruity, almost peppery, flavor.
Pairings: Crisp white wine, Prosecco.
Made with pasteurized goat's milk and traditional rennet.
