An American Original blue from Jasper Hill Creamery in Greensboro, Vermont, Withersbrook is named for a spring behind their creamery. When the blue has finished aging in their underground cellar, Witherspoon is then soaked in Eden Ice Cider --a dessert style cider crafted by overwintering apple cider outside in Vermont's cold winter weather. Enjoy on your favorite steak or on a cheeseboard with oatcakes, salami, honey, figs, and a caramelized onion jam. Taste: Rich, dense, fruity, and lactic with a savory finish; notes of honey and roasted nuts. Pairings: Sauvignon Blanc, bubbly Rosé; Eden Ice Cider, Port; Belgian ales.
