FireFly’s most award winning cheese, this Valençay look-a-like, is a blue-ripened goat cheese--a result of mistakenly putting their soft-ripened cheeses to close to their blue cheeses--is handmade at Firefly Farms in Accident, Maryland. Sustainably produced using only local milk, the whey is donated too local farmers, and solar panels supply one-third of the farms demand. Enjoy with a fresh baguette, prosciutto or salami, fruit, nuts and honey. Taste: Creamy, mild, rich, and bright with a hint of blue funk and notes of mushrooms. Pairings: Sauvignon Blanc, Rosé, Riesling. Made with pasteurized goat's milk and microbial rennet.
