Handmade by the "greenest cheese factory in the world" (a cooperative in Westbeemster, Netherlands), Stomeptoren, a Gouda named after a village 6 miles north, is 15 days old when it travels to Kerkdriel to mature in the cellars there. Enjoy with smoked almonds, dates, or a fig spread.
