Popular in the region of the North of France, women would smuggle cheese during World War II to avoid being taxed. In 1940, a black market developed, and it came to be seen as a means for survival. Most likely, first milkings went to the tax collectors and the second ‘secret’ milkings were used to make cheese—an early form of tax evasion. Enjoy with a crusty baguette or shredded on a salad. Taste: Light, sweet, and toasty. Pairings: Light malty beer or Dunkel. Made with pasteurized goat's milk and traditional rennet.
