Slow Food partners (people committed to a food system in which everyone has access to good, clean and fair food) this artisanal cheese is made by only two farmer-owned dairies in the province of South Holland, Netherlands. This beautifully crafted cheese is made from raw summer milk from cows that are out in the meadows day and night. The cheese is traditionally made using wooden barrels and linen cloths. Wonderful grating cheese and caramelizes beautifully. Taste: Smooth, sweet, nutty, with intense yet balanced taste of butterscotch and a hint of salt; crunchy crystals. Pairings: Cabernet Sauvignon, dessert wines, port; stout beer. Made with raw cow's milk and traditional rennet.
