Based on a recipe for the classic farmhouse cheese Azeitao and made in small batches by artisan producer Casa Lusa, Zimbro is hand-formed, wrapped in cheesecloth and washed in salt water in Portugal’s Regione di Alentejo. Remove the top, like carving a pumpkin, then scoop the innards. Taste: A delicate, slightly sour flavor and sweet, piquant & herbaceous finish. Pairings: Rioja. Made with raw sheep's milk and vegetable rennet.
