The most popular cheese of Portugal, the “king of cheese” has been made for centuries by shepherds in the mountains of Serra da Estrela. With the youth lacking an interest in becoming shepherds, it is believed this artisan cheese may disappear. If soft, remove the top, like carving a pumpkin, then scoop the innards.
Taste: Creamy, sweet, clean and slightly sour.
Pairings: Rioja, port, sherry.
Made with raw cow's milk and thistle rennet.
