Named after the patron saint of the city of St. Gallen, Switzerland, Gallus won the best semi-hard cheese award at the World Cheese Championship in March 2020. Made in the Toggenburg valley by a small family-owned dairy, it is then aged in a climate controlled cellar that helps give this cheese its unique spicy taste. Enjoy alone with crackers or since it is easy to melt, enjoy on grilled cheese sandwiches or casseroles.
Taste: Smooth, creamy, spicy, salty; crunchy crystals.
Pairings: A fruity red.
Made with raw cow's milk and traditional rennet.
