Made at the Germain dairy in the Champagne region of France, Langres is a PDO washed-rind cheese. “The Langres owes its concave shape to its maturing process during which it is never turned, causing the formation of a ‘well’. Traditionally, it was designed to hold Champagne in order to be flambeed, thus revealing its sweetness.” ~ Bernard, Master Cheesemaker, Germain dairy. Pour drink of choice on top and flambee! Taste: A little stinker, but with a mild, salty taste. Pairings: Champagne, Burgundy, Marc, Brandy. Made with pasteurized cow's milk and traditional rennet.
