São Jorge is a 33 x 5 mile far flung, volcanic Portuguese island. With very mild winters and warm summers, cows are able to graze year round and hence the islands economy is based on São Jorge, the cheese that is still made in the traditional, farmhouse way. Enjoy in a salad or with a baguette; add to sauces or main dishes.
Taste: Clean, buttery, dry with tangy,
spicy notes.
