Louis XIV banned the import of Dutch cheeses into France, forcing the French to try to reproduce their own version of Dutch cheese - with a French twist. And let’s not forget to mention the tiny French affineurs called cheese mites which create it’s unusual rind. Grate as a substitute for parmesan or cheddar. You can also make your own ‘Cheez-it’ by drying thin slices in oven!
Taste: Nutty and buttery; smooth and sweet; not too much salt or fat.
Pairings: Muscatel, sweet Riesling, smooth Sherry or mild ale.
