This artisan cheese is made by Estanislao, a third generation cheesemaker, in Cuenca province La Mancha, Spain, where the terrain is rocky, dry and unfriendly to cows but suited to sheep. Great snack cheese; serve with fruit and Serrano Ham or a
salad; melts beautifully.
Taste: Light and flavorful; floral scent
and nutty flavor.
Pairings: Red Rioja, Navarra, Tempranillo,
Fino sherry.
Made with raw sheep's milk and traditional rennet.
