Made by Central Formaggi in Sardinia, the island off the Westcoast of Italy, this artisan sheep cheese is made using local milk. Keeping with traditional farming practices, shepherd’s continue to use transhumance, moving livestock as the seasons change, from coastal grazing areas to pastures in the mountains. Infused with crema di pepperoncino, a chili paste made from fresh chilies, salt, garlic and olive oil, a lovely marbling effect is created. Enjoy as a snack, on grilled cheese sandwiches & melted over nachos. Taste: Piquant, nutty, sweet. Pairings: Chardonnay or pale ale. Made with pasteurized sheep's milk and traditional rennet.
