This Basque-style artisan cheese is made by the Fromagerie des Chaumes in the Basque region of Mauléon. Local shepherds and farmers provide the milk from a hardy French dairy sheep, native to the Pyrenees, that produces high-quality milk used to make cheeses, like Ossau-Iraty and Etorki. Enjoy with a baguette, apples or pears, charcuterie, and olives; enjoy melted on casseroles. Taste: Rich, smooth, and sweet with hazelnut and caramel notes. Pairings: Chardonnay, Rioja, sparkling and young muscat wines. Made with pasteurized sheep's milk and traditional rennet.
