This hand-crafted farmstead cheese from Cooleeney Farm in Tipperary, Ireland, has a lovely rustic rind and is made by the 4th generation of the Maher family from the milk of their own friesian dairy herd. Serve with fresh fruit or a nice fruit spread. Taste: Mild & buttery with notes of earth & cellar coming thru the rind; Tomme de Savoie-like. Pairings: Pinot Noir, Viognier. Made with pasteurized cow's milk and vegetarian rennet.
