A champion for lesser-known Swiss cheeses, affineur Walo von Mühlenen maintains close relationships with small dairies. Creamy Lion was created after Walo asked a cheesemaker in the village of Thurgau to help him create a cheese to represent the ‘joie de vivre’ of their mountains. Easy to melt, enjoy on your morning eggs, grilled sandwiches or casseroles and at a raclette party. Taste: Smooth, creamy, tangy. Pairings: A light, crisp white or fruity red wine. Made with raw cow's milk and microbial rennet.
