An artisan specialty and made by hand from the region of Castilla-La Mancha, Spain--a place known for its culture, monuments, wines and cheese--this aromatic cheese is macerated in Spanish wine for several days prior to aging, deeply tinting the rind a purple hue. Serve with Spanish sides like chorizo, figs, Marcona almonds, olives. Taste: Sweet and smooth with red wine aromas; mild & fruity flavor. Pairings: Spanish reds: Rioja, Tempranillo, Ribera del Duero, Garnacha. Made with pasteurized goat's milk and microbial rennet.
