Harbison is a bark-wrapped bloomy-rind cheese made by Jasper Hill Farms and named after Anne Harbison, seen by many to be the ‘grandmother of Greensboro, Vermont’. Cut the top off, and spread on a piece of crusty bread or crackers. Taste: Herbal notes at the start, creamy and buttery at the finish; earthy and notes of mushrooms. Pairings: Crisp sparkling white, or a bright, hoppy IPA. Made with pasteurized cow's milk and traditional rennet.
